WHAT IS RYE?
Rye (Secale cereale) is a special cereal grown almost exclusively in the north-western part of the Eastern Hemisphere. The ear of rye is similar to that of wheat, but longer and more slender. Rye is typically consumed as wholegrain, which means that all edible parts of the grain is used, including the white flour, the nutritious germ and the fibre-rich bran. Among the cereals, rye has the highest content of dietary fibre. Lots of exciting research has been made on rye, showing rye foods to be a healthy choice.
